Clammed Bisgetti

This is setup a bit different. It includes the preparation with ingredients at each step.
  1. Using a heavy or cast iron skillet, heat and cook slowly for ½ hour until broken down but not brown:
    • ½ cup olive oil
    • 1 chopped dried chilé pepper (can buy in jar)
    • 1 large, chopped onion
    • 3 big garlic cloves, mashed
    • basil - generous amount (I mash the dried basil in the palms of my hands)
    • salt & pepper
  2. Pour juice into sauce, save clams
    • 2 cans chopped clams
  3. Simmer & cook down until it is oily instead of watery. Keep hot.
  4. Cook with a drop olive oil
    • 16oz spaghetti (for 6 people)
  5. Do not rinse spaghetti.
  6. Add & cook for approximately 5 minutes
    • ½ cup chopped parsley
    • 6 tblsp romano cheese
    • reserved clams

    Optional: Can be made ahead of time & and reheated. It is almost better the next day as the flavors meld together.
